12 Days of Christmas - Gingerbread Cupcakes with Cinnamon Buttercream

So, on the 12th day of Christmas "A Kiwi Mumma" gave to you...

Gingerbread Cupcakes with Cinnamon Buttercream 




As I spend a lot of my time baking and decorating cakes, I thought it wouldn't be right if I didn't do a Christmassy cake right?

So, here it is! Super easy and delicious Christmas Cupcakes!



You will need:

2/3 C unsalted butter, softened

3/4 C light brown sugar

3 large free-range eggs, at room temperature

11/4 C self-raising flour

1 teaspoon ground ginger

1/2 teaspoon ground cinnamon

Small pinch of grated nutmeg (optional

1-2 tablespoons milk


Directions:

Preheat oven to 180 degrees celsius. Line a muffin tin with cupcake liners.

Cream the butter and sugar together until light and fluffy. I used a stand mixer.

Add eggs one at a time until well combined.

In a separate bowl combine cinnamon, ginger and nutmeg with the flour.

Gradually add to the wet ingredients, mixing well after each time.

Add milk, mixing well to make sure all ingredients are mixed together well. I only ended up using 1 T of milk, because the mixture is quite wet.

Distribute evenly to cupcake case - makes 12!

Bake for 10 - 15 minutes, until risen and when a skewer is inserted into the middle it comes out clean.

Allow to cool and ice with...




Cinnamon Buttercream

You will need:

- 1 C Softened butter
- 2 C Icing Sugar
- 1 T Cinnamon
- 1 t Vanilla Essence
- 2 to 3 T Milk or Cream

In a stand mixer or using a hand mixer, beat butter until light and fluffy. Slowly add icing sugar, continuing to beat. Add vanilla essence and Cinnamon (to taste, I added a bit more than one tablespoon), continue to mix until well combined. Add milk until desired consistency. More milk for a smoother consistency and less for a stiff consistency. Then decorate as you wish!
